According to the couple, soon after Fletcher was rescued, “Sadness slipped away, and a good life began. Fletcher’s heart is so big, he wants everyone to be as happy as he is.”
Happy as a dog with a bone sitting next to a roaring fireplace is how you’ll feel when you make your way from the street-level Fletcher’s restaurant and
bar to the subterranean Library Lounge. Wooden bookshelves and display cases, rich leather sofas and chairs, an in-wall fireplace, soft lighting, thick imported rugs and a portrait of Fletcher himself is what you’ll find in this unique and intimate space for guests who are ages 21 and over.
It feels like entering a posh, private club — a temporary escape from the real world.
Fletcher’s Library Lounge is an ideal place to enjoy a craft cocktail from a talented bartender, along with outstanding cuisine from Executive Chef Scott Boberek. His short-rib grilled cheese is made using tender, juicy boneless beef short rib and Beehive Cheese’s Promontory Cheddar with tomato and arugula. It’s grilled to perfection and served with a roasted garlic aioli. It justifiably garnered a Utah “Best in State” award.
Fletcher’s street level bar and basement Library Lounge features “Appy Hour” from 5 to 7 p.m. with tempting bar bites that include blistered shishito peppers, steamed mussels, “ugly” heirloom tomato salad, baked cauliflower and Brie, Iberico pork belly, ahi tuna poke and other delectable dishes at seriously discounted prices.
Guests who dine elsewhere on Main Street can still drop into the Library Lounge for a nightcap and dessert. For the latter, guests can choose from a menu of sweet temptations that include chocolate mud pie, carrot cake and the gluten-free chocolate chip skillet. Chef Scott and Sous Chef Marina Soto describe their warm butter cake as being, “Like a song stuck in your head.”
Well, you won’t soon be able to get that unforgettable cake — which is adorned with raspberry coulis, orange sauce, berries and vanilla ice cream — out of your head. It’s a killer cake and the perfect way to end an evening at Fletcher’s fetching Library Lounge.
